Bean tacos are so fast and simple to make and they really fill you up. They are packed with protein and Vitamin C too. Takes less than 10 minutes to prepare. Enjoy.
Note: I also add avocado or onion to change it up.
6 Small corn tortilla shells
of refried beans (recommend Rosarita Vegetarian Refried Beans)
1 Cup of shredded cheese
1 Cup of diced peppers (red, orange, yellow or green)
1/2 Cup o
f diced roma tomatoes
1/2 Cup shredded lettuce or spinach
1 Jalapeno – diced – optional
Heat beans on the stove as directed on the can.
Warm tortillas so they are bendable without breaking.
Place tortillas on plate flat.
Spread beans across tortilla side up.
Add tomatoes, peppers and jalapeno evenly across all tortillas.
Sprinkle cheese across the top.
Add lettuce as a garnish on top.
