2 cups milk
20 ounces thawed hash browns
Black pepper to taste
Crushed red pepper to taste
1/2 a diced white onion
1 small red pepper diced
1 small yellow pepper diced
1 small green pepper diced
1/2 cup fresh spinach chopped
1 jalapeño diced (optional for a little kick)
2 cups shredded mozzarella cheese
Preheat oven to 350 degrees.
Dice veggies and mix together across a light greased of sprayed 11×9 glass pan.
In a large glass bowl whisk eggs, milk and black and red pepper seasoning together. Once mixture is airy mix in hash browns.
Pour eggs over veggies in glass plan. Smooth out any clumps of hash browns. Cover with foil and bake at 350 for 40 minutes.
Remove foil and add a layer of shredded mozzarella cheese. Bake uncovered for 30 mins or until eggs are fully set.
