Stuffed Peppers

Ingredients:
4 green peppers
1/2 onion
1 jalapeño ( optional)
1/2 red pepper
2 cup shredded Colby Jack cheese
1 can black beans
1 can sweet corn
2 cups cooked white rice
Salt and pepper to taste.

Directions:
Preheat oven to 350 degrees.
Clean and chop the top of the peppers off. Remove seeds from inside, set bodies aside.
Chop pepper tops, red pepper, onion, jalapeño and mix together in a bowl.
Drain beans and corn.
Mix corn and beans with vegetables in a bowl.
Mix in the cooked rice (follow rice directions to cook beforehand).
Mix in 1 cup of shredded cheese.
Spoon mixture into green peppers evenly.
Place on a cookie sheet or oven pan.
Bake for 30 minutes at 350 degrees.
Remove and add remaining cheese over peppers evenly.
Replace in oven and bake another 15 minutes or until cheese is completely melted.
Cut in half. Salt and pepper to taste. Serve and enjoy.
